Good-for-You Recipe to Help Control Low Blood Sugar

A special note:

These Blueberry Almond Muffins are great as is, but as someone pointed out, they do contain quite a bit of honey.
You can substitute 3/4 cup of unsweetened applesauce if you do not want to use the honey.
You may have to play with the recipe a few times to get it right—you don't want the batter so thick that you can't
get it off the spoon and into the muffin cups!
 Blueberry Almond Muffins

Makes 12 muffins


3 cups ground almonds
½ tsp baking soda
Pinch of salt
Pinch of ground nutmeg, cinnamon, cloves or pumpkin pie spice
*1 cup fresh or frozen blueberries
½ cup liquid honey (or 3/4 c unsweetened applesauce) 
¼ plain yoghurt
3 eggs
1 tbsp grated lemon rind (optional)


(*If you're like me, the more blueberries, the better! I often add 1-and-a-half cups or sometimes even 2 cups of blueberries just because I love them so much. Feel free to add more berries, but be ready with more muffin tins. Blueberries add a lot of volume, so even another 1/2 cup of blueberries could make 3 to 6 more muffins, depending on how full you make the muffin cups—LRS)

1. Preheat oven to 375°F (190°C or Gas Mark 5).
2. Line muffin pan with paper liners and set aside.
3. In large bowl, whisk together almonds, baking soda, salt and nutmeg.
4. In separate bowl, whisk together honey, yogurt, eggs and lemon rind; pour over flour mixture and stir until loose batter forms.
5. Fold in blueberries.
6. Spoon into prepared muffin cups, filling to top.
7. Bake in centre of oven until golden and tops spring back when touched, about 20 minutes.
8. Let cool in pan on rack for 5 minutes. Transfer to rack and cool completely.
9. Store in airtight container for 2 days or freeze for up to 2 weeks.
